Slow Cooker Broccoli Cheddar Soup
In the realm of comforting meals that don't break the bank, Slow Cooker Broccoli Cheddar Soup stands as a beacon of both taste and thriftiness. This recipe encapsulates the essence of affordable indulgence, making it a must-try for budget-conscious foodies and busy individuals alike. And this is my middle child’s absolute favorite food!
Affordability and Accessibility
One of the most enticing aspects of this recipe is its affordability. Utilizing simple, everyday ingredients that won't strain your wallet, this soup demonstrates that deliciousness doesn't have to come with a hefty price tag. From the humble onion to the versatile broccoli, each component can be sourced without burning a hole in your pocket. One way to save some money while making it is utilizing Better than Bouillon instead of chicken broth. It’s a concentrated broth base that you mix with water, but saves a ton of money over time! Another way you could save some money is by shredding your own blocks of cheese. I use my KitchenAid to do this with the shredder attachment. If you don’t have a KitchenAid or the shredder attachment, a metal grater works just as well!
Ease of Preparation
Busy schedules often demand meals that are quick and easy to prepare. With just 15 minutes of prep time, Slow Cooker Broccoli Cheddar Soup fits the bill perfectly. Whether you're a novice in the kitchen or a seasoned chef seeking convenience, this recipe streamlines the cooking process without compromising on flavor. By utilizing matchstick carrots from the store, you don’t have to spend so much time chopping veggies. I also usually buy bags of broccoli where they’re already chopped instead of a head, but if you buy heads of broccoli, it might be cheaper!
Adaptability
One of the beauties of this recipe lies in its adaptability, catering to various cooking preferences and equipment. While it's designed for the convenience of a slow cooker, it can easily be adjusted for stove-top or pressure cooker preparation.
Stove-top
For stove-top cooking, simply transfer the chopped onion, broccoli, carrots, celery, salt, pepper, and chicken broth to a large pot. Bring the mixture to a boil over medium-high heat, then reduce the heat to low and let it simmer, covered, for about 20-25 minutes or until the vegetables are tender. In a separate small saucepan, melt the butter and whisk in the flour to create a roux. Gradually whisk in the milk until smooth, then stir this mixture into the pot with the cooked vegetables. Add the shredded cheese, stirring until melted and the soup is creamy. Allow it to simmer gently for an additional 5-10 minutes to meld the flavors together before serving.
Pressure Cooker
For pressure cooker (Instant Pot) cooking, start by setting the Instant Pot to sauté mode. Add a bit of oil and sauté the chopped onion, broccoli, carrots, celery, salt, and pepper for about 3-4 minutes until slightly softened. Then, add the chicken broth to deglaze the pot, scraping up any browned bits from the bottom. Close the lid and set the Instant Pot to pressure cook on high for 5 minutes. Once the cooking cycle is complete, perform a quick release of pressure. In a separate small saucepan, melt the butter and whisk in the flour to create a roux. Gradually whisk in the milk until smooth, then stir this mixture into the Instant Pot with the cooked vegetables. Add the shredded cheese, stirring until melted and the soup is creamy. Let it simmer on the sauté mode for a few more minutes to thicken slightly before serving.
No matter the cooking method you choose, whether it's the slow cooker, stove-top, or pressure cooker, the result will be a delightful bowl of creamy Broccoli Cheddar Soup that's sure to warm both body and soul.
